Banana and Passionfruit Muffins

Combine 2 large mashed bananas and the flesh of 3 passionfruit. Add to sifted 1/2 cup FOUR LEAF Organic Super Fine Flour & 1 1/2 cups FOUR LEAF Organic SR Flour. In another bowl combine 1/2 cup Melrose Safflower High Oleic Cooking Oil, 3/4 cup orange juice, 1/2 cup Melrose Organic Apple or Pear Juice Concentrate, 2 whole eggs or 3 egg whites and beat well. Add to flour mix and spoon evenly into greased muffin tray and top with a banana slice.

Bake for 20 - 25 mins at 180C until golden brown.
