Back in the 1800’s, the ex-Governor of Bengal had a problem. He had retired to the town of Worcester, England, and found that he missed his favourite Bengali food: a spicy and piquant sauce. He missed this sauce so much that he commissioned his local chemists to make up a batch. When the chemists tasted the finished product, they thought it was awful—a horrible, bitter liquid—so they left the sauce in their cellar and promptly forgot about it. Years later, when cleaning up the cellar, they rediscovered the sauce, which had now fermented and brewed over time. Instead of the bitter taste they remembered, it was now a rich, wonderfully flavoured sauce that became a best seller.
