    Our resident nutritionist, Steph Lowe, has put together this delicious Lemon & Blueberry Chia Pudding as the perfect treat to enjoy with a cup of T2’s The Belly Blend. This low carb breakfast, snack or dessert incorporates Melrose Balanced + Lean to promote fat loss. 100% guilt free!


    Ingredients (Serves 1)

    4 tablespoons chia seeds

    3/4 cup unsweetened coconut milk

    1 teaspoon organic vanilla extract

    1 serve Melrose Essential Nutrients+ Balanced and Lean

    1 teaspoon Melrose Organic Rice Syrup

    1 tablespoon lemon juice + zest

    ¼ cup blueberries, frozen or fresh

    1 tablespoon coconut yoghurt, to serve

  • Method:

    Place chia seeds, milk, vanilla, Balanced and Lean powder, rice syrup and 1 teaspoon of lemon juice into a bowl and stir well. Let sit for 5 minutes before stirring again to ensure all seeds are coated with liquid.

    Put chia pudding aside to set (approximately 15 minutes) or soak overnight in the fridge if preparing in advance.

    To make the berry compote, place blueberries and remaining lemon juice in a saucepan over low heat. Stir and let simmer covered for 10 minutes.

    To serve, top chia pudding with berry compote, coconut yoghurt and lemon zest.
