Spring Pesto Salad
Easy, delicious and super nutritious. This spring pesto salad ticks all the boxes for a balanced and healthy main meal or side salad with an added hit of hidden nutrients from Essential Greens.
- 2 zucchini, sliced into ribbons
- 2 cups rocket
- 2 bunch asparagus, blanched and chopped
- ¼ cup Super Green Pesto (https://www.melrosehealth.com.au/recipes/item/super-green-pesto)
- 4 tablespoons walnuts
- 60g goats cheese, optional
- Sea salt and black pepper, to season
In a large bowl combine zucchini, rocket and asparagus.
Add Super Green Pesto, ½ the walnuts and goats cheese, season and toss well to combine.
Serve into plates and top with remaining walnuts and cheese.
