The easiest way to get kids to eat their greens? Hide them in avocado in this delicious and fun lunchbox idea for DIY tacos. A well-balanced meal with fresh vegetables, protein, carbs and healthy fats to keep them going all afternoon.

Ingredients:

  • 1/2 Avocado
  • 1 large white wrap 
  • 1/4 cup natural yoghurt
  • 2 mini cucumbers (qukes)
  • 1/4 cup cherry tomatoes 
  • 1/2 cup shredded chicken (breast)
  • 1/4 cup grated cheese
  • 1 wedge of a lime
  • 1/4 cup corn kernels (canned)
  • 1/2 mango
  • 1 teaspoon Essential Greens
  • Pinch of salt

Method:

The idea is to assemble the bento box as a DIY, once the avocado is cut up and mashed we add a pinch of salt and essential greens, we give it a really good mix. Pop cherry tomatoes on top and assemble.
